I’ve always read that Gnome uses or expects you to use a pretty specific workflow.

Is there a blog post, video or something else that describes this workflow in detail?

I’d say it seems way easier to use the touchpad (if available) to move between workspaces.

The same to open the app selection menu on the dock.

And since you use the different workspaces, I’d say get an extension to open one app in workspace 1, another in workspace 2 and so on.

      That’s my workflow at least😇

If anything, GNOME is very self explanatory. Being next-to-zero-setup and intuitive are key design goals of GNOME. In contrast to KDE, you are more likely to be forced into a specific workflow rather than having to find one that suits you. Has its pros and cons.
